
.INGREDIENTS
1 5-8 lb chicken (cleaned, washed and cut into pieces)
2 tsp salt
1 1/2 tsp pepper
2 tsp all purpose seasoning
Chinese salt (vetsin)
1/4 tsp adobo seasoning
1 tbsp ginger (grated)
3 cloves garlic (grated)
1/4 cup lime juice
1 tsp paprika
1 tsp-3 tsp hot sauce (optional)
2 1/2 tbsp ketchup
1/4 stick salted butter
2 tbsp oil
2 1/2 tbsp sugar (preferably brown)
METHOD
1. Squeeze lemon juice into chicken and combine well.
2. Grate ginger and garlic and add to chicken.
3. Season chicken with salt, pepper, Chinese salt, all
purpose seasoning, adobo seasoning and paprika. Leave to
marinate for 30 minutes or overnight.
4. Heat a heavy pan or pot and add oil and sugar to the pot.
5. Leave the sugar to 'burn' until it gets caramelized into a
dark brown/black (sugar should not smoke much).
6. Add chicken pieces and stir in burnt sugar.
7. Add 1/2 cup of water in marinade seasoning, and add to
chicken and stir.
8. Leave chicken until water dries out to a little in pot (do
not leave pot unattended for long).
9. Add a 1/4 cup water to chicken again, leave to cook until
water dries out, repeat two more times or until chicken turns
slightly brown.
10. When chicken is brown add enough water to cover chicken,
add ketchup, salted butter and hot sauce.
11. Cover chicken and leave to cook, check chicken in 10
minutes and see if water is absorbing, taste and add salt and/or
1 tsp more above seasonings if desired.
12. Leave chicken to cook until there is enough sauce in pot,
about 1/3 or 1/4 sauce.
