Baked Potato Casserole 2

6 medium potatoes, unpeeled

6 T butter

1 1/2 c shredded *Co-Jack (or any other cheese/combination of cheeses)

8 oz. sour cream

1 T milk

3 green onions, chopped

1 clove garlic, minced

1/2 tsp. kosher salt

1/2 tsp. freshly ground garlic pepper

1/4 tsp. onion salt

1/4 tsp. garlic salt

8 slices of bacon, fried crisp and crumbled

1 c additional shredded cheese *(see above)

Bake potatoes (in oven or microwave).

Cool potatoes, remove skins and shred. In a saucepan, combine 1 1/2 c cheese and butter; stir until cheese is melted.

Remove from heat and add sour cream, milk, onions, garlic and spices.

Fold in potatoes and spoon into a greased 2 quart casserole dish.

Sprinkle with bacon and remaining 1 c cheese.

Cover and bake 25 minutes at 300 degrees.
