
8 slices bacon (fried); reserve 2 T grease
1 � c chopped onion
2 T garlic (pressed)
Set bacon aside and pour reserved grease back into a large,
heavy bottomed skillet. Sautee onions and garlic till
translucent.
1 T hot Mexican chili powder
2 tsp. cumin
Dash of cayenne
Sprinkle spices over onion/garlic mixture. Cook, stirring
constantly, for one minute.
2 can black beans (rinsed and drained)
Add beans, then cook and stir for an additional five minutes.
6 oz. shredded Monterey Jack Cheese (divided)
2 - 3 tsp. fresh lime juice
Stir 4 oz. cheese and lime juice into bean mixture, then
transfer to a food processor.
Process till smooth, add crumbled bacon, and then pour into an
oven proof dish.
Sprinkle with remaining shredded Jack cheese and bake at 350
about 20 minutes (until cheese melts and is slightly browned).
Serve with plain tortilla chips, and sour cream on the side.
