Brown Sugar Carrot Coins

6 carrots, scraped clean and sliced into coins

2 T butter (cut into small pieces)

1/2 c firmly packed brown sugar

Bring water to boil in a large pot.

Add carrots, reduce heat and simmer until fork tender (about 10 minutes).

Drain, sprinkle with brown sugar, dot with butter and bake at 450 degrees for 20 minutes.
