
4 skinless boneless, whole chicken breasts
kosher salt
freshly ground pepper
8 pieces sliced ham
8 slices Swiss cheese
1/2 cup flour
1 egg, beaten + 2 T water
1 c crushed Saltines or unseasoned bread crumbs
vegetable oil for frying
Cut breasts in half.
Pound each piece flat and sprinkle with a little salt and
pepper.
Place a slice of ham and a piece of cheese diagonally on each
breast and then roll up.
Secure with toothpicks and chill for at least one hour.
Roll in flour, then in beaten egg and finally in cracker or
bread crumbs.
Fry in hot oil until juices run clear (about 10 minutes,
turning once).
Toss a green salad and uncork a nice bottle of white wine ~
