
1 lb. bacon
2 large white onions, quartered
3 lbs. fresh green beans, rinsed and trimmed
1 lb. new potatoes (scrubbed)
Lawry's Seasoned Salt
Freshly ground garlic pepper
Spray a large, heavy bottomed pan with Pam.
Lay 1/4 lb. bacon on bottom of pan and add 1/3 green beans and
onions. Season with salt and pepper.
Add another layer of 1/4 lb. bacon and 1/3 green beans and
onions. Season and repeat once again. Top all with last layer of
bacon. Add enough water to cover and bring to a boil.
Reduce heat to simmer, cover and cook for 3-4 hours (or until
bacon begins to break up), stirring gently every 1/2 hour or so.
Make sure to keep water level sufficient to prevent sticking
on bottom of pan.
Add potatoes with just enough water to cover, bring to a boil,
and reduce heat to gently boiling for 20 minutes or until
potatoes are fork tender.
Adjust seasonings and serve with fresh green onions and sliced
garden tomatoes with *Pink Mayonnaise on the side.
Pink Mayonnaise
Hellman's mayonnaise
Paprika
Cayenne pepper
Spoon some Hellman's into a small bowl, and add enough paprika
to make it pink. Add cayenne pepper to taste.
Dollop onto tomato slices and use as a dip for the green
onions.
