
10 ounces frozen peas
6 slices bacon, chopped into cubes and cooked (can use
Canadian bacon or cooked Spam)
8 ounces cheddar cheese, cut into small cubes
2 tablespoons onion, chopped
1/2 cup mayonnaise
1 teaspoon mustard (yellow or Dijon)
Salt and pepper to taste
1. Rinse peas under cold water to quick thaw; drain very well.
2. Mix all the ingredients; cover and refrigerate for 2 hours
to blend flavors.
This economical and easy recipe can be modified a hundred
different ways. Add your favorite vegetable (sun-dried tomatoes
are particularly good, as are mushrooms. Peas stirred in at the
last moment are a delight), serve as a main dish with a salad on
the side, or as a yummy accompaniment to any meat.
