
Pan fry some diced bacon (not crisp). Add some diced onion and
celery & saut�.
Dice potatoes and add quite a lot of water, bacon, onion and
celery, also all the bacon grease, to a large pot.
Bring to a boil, then simmer covered for about 20 minutes.
Uncover and bring to a boil to drop dumplings.
Drop Dumplings:
Put an egg, salt, some broth (cooled) in a bowl. Add about 1/2
tsp. baking powder and enough flour to make thick batter.
Drop by spoonfuls into boiling broth. Cover and steam on
simmer till dumplings are tender.
Add 16 oz. fresh whipping cream, stir ever so gently, till
heated through.
For Clam Chowder, I just add a bunch of canned, minced
clams and a little juice & for Corn Chowder, I add some frozen
corn.
For Shrimp or Lobster Chowder, I add fresh seafood ~
Sometimes, I add fresh leeks or scallions to any of the above
for a little extra "ooomph," before I drop the dumplings ~ adds a
bit of color, too!
