New England Lasagna From Mimi's Kitchen

3 lbs. boneless, skinless chicken breasts

1 1/2 - 2 cups chopped green onions, chopped

1 box fresh button mushrooms, chopped

1 T dried sweet basil

1 T dried minced garlic

kosher salt and freshly ground white pepper, to taste

2/3 c d'Oro or other semi-sweet white wine

fresh baby spinach leaves

24 oz. small curd cottage cheese mixed with 3 slightly beaten eggs

9 -12 lasagna noodles, cooked and blotted dry

6 oz. each: shredded brick, mozzarella, Monterey jack, provolone and parmesan cheeses

*6 cups white sauce
