
16 oz. cream cheese, softened
16 oz. sour cream (divided)
1 c shredded cheddar cheese
1 1/2 pkg. taco seasoning mix
3 eggs, beaten
4 chopped green chilies
jar of prepared salsa or taco sauce (I make my own *salsa)
bag of Frito Scoops or tortilla chip scoops
Beat together cream cheese and 1 c sour cream until smooth.
Stir in cheese, taco seasoning, eggs and green chilies.
Spoon into a buttered or oiled baking dish. Bake at 350 for
45 - 50 minutes, or until a knife comes out clean.
Remove from oven (leave oven on) and cool 10 minutes.
Carefully spread remaining cup of sour cream evenly over the
top and return to oven for additional 10 minutes.
Cool completely and then cover with salsa or taco sauce.
Spoon into scoops and serve. Cover and refrigerate remaining.
Salsa:
6 medium tomatoes, peeled, seeded and chopped
1/2 c green peppers, seeded and chopped
1/3 c chopped onion
1 tsp. chopped jalapenos
Combine in a large bowl, cover and refrigerate overnight.
