
3 lbs. new potatoes
2 T dried minced garlic
2 T cayenne pepper
Scrub new potatoes and add to a large pot of boiling water,
along with the garlic and cayenne pepper. Reduce heat to simmer
and cover.
Cook for 20 minutes and then remove from heat. Cool and
refrigerate overnight to allow flavors to meld (these get hotter
and hotter the longer they sit) and slowly reheat in their own
liquid.
Split and serve with real butter. Sprinkle with freshly ground
garlic pepper and Kosher salt.
Mashed Spicy New Potatoes
Reheat potatoes from above recipe in their own liquid and then
strain (reserve liquid).
Put potatoes into a large, oven-safe mixing bowl, add a stick
of butter, some chopped green onion, a little of the reserved
liquid and about a T of the garlic.
Season with Kosher salt, and then beat with a mixer, adding
more liquid if needed.
Top with some shredded cheddar and put under a broiler until
cheese is golden brown. Spoon into individual serving bowls and
dollop with sour cream.
