Tuscan Meat Loaf

1 c cracker crumbs (divided)

1 1/2 lbs. ground chuck

6 oz. tomato paste

2 eggs, slightly beaten

1 medium onion, chopped finely

3/4 tsp. salt

12 oz. carton small curd cottage cheese

1 small can chopped mushroom stems and pieces, drained

1 T parsley

1/4 tsp. oregano

1/4 tsp. basil

Combine 1/2 c crumbs with ground chuck, tomato paste, eggs, onion and salt.

Press 1/2 of the mixture into the bottom of a greased 8 X 8 X 2" baking dish.

Combine remaining crumbs with cottage cheese, mushrooms and spices and spread over meat mixture.

Top with remaining meat mixture and bake 1 hour at 350 degrees.
