Crock Pot Chicken Tacos
Put 2 or 3 breasts in a crock pot. Mix together a big jar of salsa and one packet of taco seasoning mix. Pour over the chicken. Cook on low about 5-6 hours. Then, shred the chicken (I used a fork and just pressed down on it - it was so tender it fell apart). Fill taco shells and top with your favorite topping
Beef lentil soup
1 lb (or less) ground beef, ground
1 small onion, diced
4 carrots cubed
2 cups dried lentils
1 clove garlic minced or 1 tsp. garlic powder
1 quart tomatoe juice
1 quart water
1/2 tsp. marjoram
1 Tbs. salt
1 Tbs. brown sugar
Brown the ground beef in a pan and drain.
Remove stones from lentils and wash.
Add ingredients to crock pot.
Cook on high 4-6 hours or low 8-10 hours.
Optional-serve with grated cheese.
Provencal Chicken
1 m onion cut in large pieces
1 whole chicken
5 Garlic Cloves whole
1 can Chicken Broth
Spread the onion on the bottom of the crockpot, add the chicken, add the cloves and pour the chicken broth over....cook on low 6-7 hours
The chicken FALLS off the bone and tastes great. You can use leftovers for anything...my favorite is to use it for Tortilla Soup.
BEEF STROGANOFF
2lbs cubed lean beef stew beef
2 cans healthy cream of mushroom soup
1 cup chopped onion
2 tbsp worcestershire sauce
1/4 cup white wine
1/4 cup water
4 oz sour cream
1 large bag egg noodles
In a crock pot combine meat, soup, onions, worcestershire, wine, and water.
Cook on low for 6-8 hours.
Stir in sour cream before serving.
Serve over cooked egg noddles.
Makes enough for about 4 people.

Southern Pork Chops
4 large pork chops
2 onions sliced
2 tsp worchestershire sauce
1 can healthy cream of mushroom soup
1/4 cup peanut butter
1/2 cup milk
1/2 tsp salt
dash pepper
Place pork cops in crok pot. Mix all other ingrediants, except onions, and pour over chops. Place sliced onion on top to cover. Cook on low for 6-8 hours
4-6 boneless, skinless chicken breasts
1 large can of spaghetti sauce of your choice
1 small can of mushrooms
cook for 4-5 hours
serve over favorite pasta
*add any veggies you want. this dish can be changed to suit many tastes.
Cheesy Crockpot Chicken
Almost too easy, the chicken cooks in a creamy, cheesy sauce that is delicious over noodles. This freezes well, too.
2 pounds boneless, skinless chicken breasts
2 cans condensed cream of chicken soup
1 can condensed cheddar cheese soup
1/4 teaspoon garlic powder
Place chicken breasts in the crockpot. Mix the undiluted soups together with the garlic powder and pour over chicken. Cover and cook on low 6 to 8 hours, until chicken is tender.
Serve with the delicious sauce over rice or noodles.
Yield: 8 servings
Crockpot Tangy Rump Roast
I used to make this recipe in the oven, but it is much easier in the crockpot (and it even tastes better, too). The "tang" comes from the cranberry sauce (one of the just 5 ingredients used in this recipe).
1 rump roast, trimmed -- 3 - 5 lbs
1 package onion soup mix
1 can cranberry sauce -- jellied
2 tablespoons butter -- softened
2 tablespoons flour
Rinse rump roast and pat dry. Sprinkle the onion soup mix in the bottom of the crockpot. Place the rump roast in next. Spoon the cranberry sauce around and over the roast. Cover and cook on low 10 - 12 hours.
Remove roast from crockpot and allow to rest while you thicken the gravy. Turn the crockpot up to High. Blend the softened butter and flour into a paste and whisk it into the gravy. Cover and cook on high for about 10 minutes, until thick.
Slice the roast into 1/4" thick slices and serve with the gravy. The slices may be frozen in the gravy in plastic freezer bags
Favorite Beef Stew
This classic cooks unattended in the crockpot and freezes beautifully.
1 1/2 pounds stew beef -- cubed
1/4 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons oil
2 cups hot water
15 ounces tomato sauce
1 each onion -- coarsely chopped
1/2 teaspoon basil
1 each bay leaf
2 each potatoes -- cubed
3 each carrots -- sliced
2 each celery ribs -- sliced
Place flour, salt and pepper in a paper bag. Add beef cubes, a few at a time, and shake until coated. Brown meat, in batches, in oil in a large, heavy dutch oven. Place meat cubes in a crockpot as they are browned. Add all remaining ingredients to crockpot, stir, cover and cook on low for 8 to 10 hours. (Note: if doubling recipe, use a large 5 quart crockpot).

Sprinkle generously with salt and pepper. Tranfer to crockpot. For sauce, combine tomato sauce, tomato paste, water, garlic, oregano and sugar. Pour sauce over chicken. Cover and cook on low heat setting for 8 to 9 hours. Remove chicken and keep warm. Turn coker to high heat setting, stir mozzarella cheese into sauce. Cook uncovered, till cheese melts and sauce is heated through. Serve chicken and sauce over hot cooked spaghetti. Pass parmesan.

Cherry Cobbler
Ingredients:
1 16 oz can cherry pie filling
1 pkg cake mix for 1 layer cake
1 egg
3 tablespoons evaporated milk
1/2 teaspoon cinnamon
1/2 cup chopped nuts -- optional
Method:
Put pie filling in lightly buttered 3 1/2-quart crock pot and cook on high for 30 minutes.
Mix together the remaining ingredients and spoon onto the hot pie filling. Cover and cook for 2 to 3 hours on low. You may also use a lightly greased souffle dish in a larger crock pot.
Makes 6 servings.

Crockpot BBQ
1 1/2 lb. boneless chuck steak, 1 1/2 inch thick 1 clove garlic, peeled and minced 1/4 cup wine vinegar 1 Tbsp brown sugar 1 tsp paprika 2 Tbsp Worcestershire sauce 1/2 cup catsup 1 tsp salt 1 tsp dry or prepared mustard 1/4 tsp black pepper Cut the beef on a diagonal, across the grain into slices 1 inch wide. Place these in the crockpot. In a small bowl, combine the remaining ingredients. Pour over the meat, and mix. Cover and cook on Low for 3 to 5 hours.
Snake Meat
one lite keilbasa, cut into 2-3 inch chunks
one bottle la victoria mild red taco sauce
one can whole berry cranberry sauce
take both sauces and combine in crock pot, mixing thoroughly.
add sausage, stirring to coat thoroughly with sauce.
cook on high for 2-3 hours.
serve with white rice and a vegetable. (the sauce tastes REALLY good over the rice)
this may sound really bizarre, but it is REALLY good....
Crock Pot Chili
I don't really have a recipe, I just throw whatever I have in there. I'm just guessing on the amounts here.
* 2lb ground turkey (you could use ground beef also, we just use turkey for everything because we like it better)
* beans (I use about 2 cups of dry pinto, small red, and black, soaked overnight. You could also use canned beans. If I used canned beans I'd probibly use about 5 cans. Use whatever kind of beans you like).
* 1 onion
* 1 green pepper
* 1 can diced green chilis
* 2 cans Rotelle tomatos (I like the kind with cilantro and lime juice)
* 3 or 4 small cans of tomato sauce
* 1 cup (or can) of corn, if that sounds good to you
* about 2 TBS brown sugar
* salt
* garlic powder
* pepper
* cumin
* chili powder if you want some more spice
I use the crock pot, but you can also cook it on the stove. The dry beans never get tender enough in the crock pot for me, so I boil them on the stove until they're almost done before I throw them in the crock pot.
I brown the ground turkey, drain most of the grease, and add the onion, green pepper, and can of diced green chilis. After a few minutes of cooking I throw that in the crock pot too.
Add the canned ingrediants and spices (I actually hold off on adding the chili powder until it's almost done cooking, so I can tell how much more spice is needed). Cook all day. A couple minutes before it's done cooking I taste test. Add more spices if needed. I learned from a cooking show to add a tiny dash of red wine vinegar right before it's done cooking to kick the flavors up a notch.
You can cook this on the stove too. Just boil the beans completely 1st, and cook for an hour or two. This recipe makes tons, so we always have leftovers in the freezer.
Chicken corn soup
2 whole boneless skinless breasts, cubed
2 carrots, sliced
2 ribs celery, sliced
2 medium potatoes, cubed
1 onion, chopped
1 clove garlic, minced
1 can creamed corn
1 can corn, drained
1/3 cup tomato sauce
3 cups chicken broth
1 tsp. mixed dried herbs
1/2 tsp. salt
1 tsp. pepper
1 tsp italian parsley, fresh chopped
Mix all ingredients except salt, pepper, and parsley in crock pot. Cook on low 8-10 hours or high 4-5 hours or until chicken is tender. Add remaining ingredients in last 30 min of cooking.
