K Dh and i wanna start eating meat so im looking for yummy yet easy veg. dishes.

also we both wanna try tofu so if anyone has a good dish for that....thanks!!

I think you mean stop eating meat. :D

All veggie dishes feel like a side dish to me.

Yellow rice with black beans is a good start. I add sour cream to it and we even make burritos with it. It comes in a shiny yellow bag (the rice does) and for the life of me I can't think of the name. Rice and beans together makes a complex protein. Morning star makes a great TVP meat that is like hamburger meat.

I suggest you get a vegetarian cookbook and start using TVP (textured vegetable protein), falaphel can also be used to make burgers. Tofu, IMO, is an acquired taste.

This soup is one of my standbys when I need a fast dinner. I can make it faster then I can pick up McDonald's.

Chili is fabulous with lots of beans, lentils, rice, seasoning, veggies; and even good without meat. *says the beef producer quietly, so Farmer Red doesn't hear her*

This is another great one. Originally from the MDC forums


1 cup lentils
2 cups water
2 tbsp honey
2 tbsp soysauce or tamari
2 tbsp olive oil
1/2 tsp ginger
1 clove garlic
1 small onion (I actually used dried onion flakes to speed up prep time)
salt & pepper to taste

Bake in a covered dish at 350 until tender (about an hour and a half).

serve with brown rice, quinoa, or flat bread

LOL i was gonna ask u about that, Red. thanks for the ideas...im definately open to more.

Still, can i find TVP at the local grocery? (in canada) I didnt know there WAS an alternative to tofu...this is just an idea he and i were kicking around and im gonna try some before he changes his mind.

DS who is vegan likes this one to take for lunch. It is pretty easy

Boneless Chickenless Chicken Salad
Makes 4 cups (about 6 servings)

This salad is a great pretender - it has all the ingredients that make a great ìchickenî salad, without the bird! Serve it on a bed of fresh, crisp greens or as a hearty sandwich filling.

1 pound extra-firm regular tofu, rinsed and patted dry
1 cup water
1/4 cup natural soy sauce
1 cup vegan mayonnaise
1 1/2 to 2 teaspoons Dijon mustard
1/2 cup finely diced celery
1/2 cup finely diced bell pepper (green or red)
Thinly sliced scallions or grated onion (optional)

1. Oil a baking sheet or coat it with nonstick cooking spray, and set aside. Cut the tofu into 1/4-inch-thick slices. Place in two shallow dishes, large enough to fit the tofu in a single layer.

2. Combine the water and soy sauce, and pour over the tofu. Let marinate 15 to 30 minutes.

3. Preheat the oven to 400 degrees F. Remove the tofu from the marinade, and place in a single layer on the baking sheet. Bake until a deep, golden brown and the surface is dry, about 30 minutes.

4. Allow the tofu to cool until it can be easily handled, then slice it into very thin strips or shreds. Transfer to a bowl with the vegetables, and add thinly sliced scallions or grated onion, if desired.

5. Stir together the dressing and mustard. Add just enough to the salad to moisten it to your liking. Toss gently until everything is evenly coated. Chill before serving.

Per serving: Calories 149, Protein 9 g, Carbohydrates 4 g, Fat 10 g

Variation: For Southern-Style Chickenless Salad, omit the bell pepper and scallions and add 1/2 cup chopped pecans

Tay, TVP can be found at a health food store. It actually isn't bad. I also have a stuff pepper recipe that uses lentil beans as a base. It is really good. You can make cabbage rolls with the stuffing too.

Morning star makes a lot of different things and BOCO burgers are another option.

I always tell people(like people who ask what to make if we come for dinner)-
I think the easiest way to start making veg food is to think of food you already regularly make that might be veg,or could easily be veg.At least that way its not like some all new strange thing at 1st.
Like pasta dishes, burritos,pizza,or stir fry.
Morning star and boca "crumbles",and TVP are great for recipes that usually call for hamburger meat- if you wanted to a replacement.
and "quorn" is really good for chicken type dishes.So is tofu.

Honestly,
I have been vegetarian for YEARS,and only recently( now that we are eating more vegan food) have started cooking tofu myself.DH had NEVER been a big fan,and I can just never seem to marinate it as good as the Chinese(or Thia) places I've got it from.
Stir fry is still my favorite thing to toss it into.
Dh did really like the tofu scrambled"egg" though.

I like to cook a bunch of dry beans one night ,and eat some on top or rice or as a side.Then,have veggie loaf the next night,then have veggie loaf sandwiches for lunch the next day.

Lentil Stuffed Green Peppers 30 mins @ 350 F.

1 C Lentil Beans
4 or 5 Med Green Peppers
2 1/2 C water
3/4 C. Soft bread crumbs
salt
5 TBS butter
1 onion chopped
1 8oz can tomato sauce
5 tbs Grated Parmesan
1 or 2 cloves of garlic


Bring lentils to a boil in salted water. Cover and simmer 35 minutes or until liquid is absorbed. Saute' onions and a little garlic. Add 3 TBS Parmesan and season with salt and pepper. Split peppers lengthwise and parboil in boiling water for 5 minutes. Drain and fill. Brown bread crumbs in butter. Place filled peppers in a shallow baking dish. Surround peppers with tomato sauce. Sprinkle with bread crumbs and Parmesan.

My ma says that when you parboil the peppers it takes the strong pepper taste away.


****For meat eaters****** she does add 2 slices of bacon diced and sautes the onions and garlic in the drippings from the bacon.
