My daughter (second one) is 6 weeks old. I had a great experience breastfeeding my first daughter (4 y.o.) but my second daughter is giving me some challenges.... She developed a severe jaundice and since my milk was delayed, she was supplemented with formula. She now latches on well but she is still very inconsistent with her feedings. She wants to feed frequently (sometimes every hour) but then isn't hungry enough to feed for a significant time. Sometimes she nurses both sides (and empties the breasts) but still isn't satisfied until she gets a bit of formula.

All these things I can deal with and wait for her to find her rhythm but recently, she started to get really upset during feedings. She cries like she is in pain and violently spits out the nipple. Then once she has ejected the nipple, she is upset that she lost the nipple. Needless to say, these feedings are messy, as she gets the dripping milk all over her face, as I am trying to get it back in her mouth. I thought maybe the let down (very strong) forces too much milk into her mouth but then she doesn't react this way at every feeding (and I have strong let downs at every feeding). I have tried trying to keep her in upright position (football hold). But nothing has worked consistently. I should also add that she is VERY gassy.

Sounds like an abundance of foremilk :) and a need for more hindmilk :)
Do some breast compression as she feeds, massage from the chest wall downwards to have her receive the most hind milk as possible. Green, frothy stools are also indicative of more foremilk/not enough hindmilk.

I will try that. But her "violent" reaction is usually during beginning of the feeding. How can I help her so she stays latched on? It's frustrating because she is hungry but won't stay latched on. My husband is quick to offer her the bottle which I am trying very hard to resist. She doesn't do this with the bottle. I should add that her stoole is mustard yellow and not frothy.

Hmm. It could be a reaction to your milk ejection reflex.
Since your supply is very good, why don't you get in touch with a private practice IBCLC and try a silicone nipple shield?
