I really don't want to go to the store for one lemon. Would it taste bad if I didn't use it?

I would think that it would be perfectly fine without the lemon.

If you don't use lemon juice then the peaches may brown but, other then that you should be fine.

Yep, this. The lemon prevents oxidation.

Thanks. It's in the oven now. I didn't use lemon and used very ripe peaches. We'll so how it turned out in about 30 minutes!

I think I just gained 5 lbs. from reading the recipe and looking at the pictures. It looks delicious. I'm glad you enjoyed it!
