I won't start a fire or anything putting onions with sherry and other things poured over them in the oven right? Just don't spill it, and I'll be good?

I don't think so but, If you boil the sherry for a minute or so then it for sure shouldn't.

No, you won't light a fire. I have done terriyaki chicken in the oven with sherry before.

I pour wine straight out of the bottle into a pan in the oven with meat (that is how we cooked our ribs today before finishing them on the grill).

Liquor has to be around 80 proof to flambe stuff (that's 40% alcohol). Wine is usually between 8-14%. Fortified wines such as sherry should still be under 20%. You're safe.
