Just wondering if this sounds like a cause for concern. This is dds newest schedule:

Wake between 5 & 6am - nurse sometimes we cuddle and sleep in till 9 or otherwise,

she nurses again or gets a bottle and naps at daycare 9:30 45 mins to an hour,

Nurse upon waking and then nurses to sleep at about 11:30 (I try to give her a snack in here of fruit or yogurt) She naps for about 1 hour

Nurse again at 2 and she naps again for 2-3 hours.

Wakes nurses, eats dinner, then is off to bed between 7 and 8.

In total she is sleeping 14-16 hours - which is the most she has ever slept in her little life. But my problem is that she is eating so much less. As you can see she is only nursing 6 times per day, and eating one small snack and one larger meal. In addition she might have an oz or two of water a day from her sippy cup. This entertains her while I make dinner.

She has woken up dry in the morning a couple of times so I started to worry if she is drinking enough. Throughout the day, she gives us wet diapers and a poop every other day or so. Any thoughts? Should I be concerned or just go with it?

I'd go with it, she's probably getting ready to start something new on the developmental trail.
maybe I'd discontinue the water in a sipper cup, or make sure it's no more than 1/2 to 1 ounce.
I'd make sure dinner is breastmilk first, then perhaps a bite of something. I'm not sure what you are giving by way of solids, breastmilk should still come first before any solids at the ripe old age of 7.5 months.

What Amy G said :) Sounds like normal baby stuff to me.
