View Full Version : I have lots of apples; what can I do with them?

My apple tree is loaded. There is no way that we can eat all these apples before they rot. What can I make with them, and how would I put them up?
On another thread, bm4 suggested making applesauce or roasted apples, but I don't even know a good recipe for any of that. I prefer as natural as possible.

Could you bring some to a local food shelter? Alot of the donations they get are boxed foods, it might be nice to have some fresh fruit there. Or a church or something?

I made applesauce the other day. I used a few pounds of apples, 1/4 cup of lemon juice, 1/2 cup raw honey, and cinnamon, cloves and nutmeg to taste. Oh, and a little water in the bottom of the pan, about 1 cup. I let it simmer for about 20 minutes, ran it through the food processor, and processed in a boiler water bath for 20 minutes. You could just freeze, though, if you wanted.
You could make apple butter or apple pie filling for the winter.

the bold part is for canning the apples in canning jars. you put the hot applesauce in sterilized jars, add the lid and put in a boiling water for 20 minutes.
I make apple butter--use crockpot apple butter recipe for the closest. I reduce the amount of sugar, only adding the sugar toward the end of the cooking process and adjust it to taste.
apple sauce, I fill a pot with apples and a bit of water, let cook til apples are smushy. I often add no sugar, and if I add cinnamon, I don't worry if the apples turn brown cause the cinnamon will make them brown. I usually leave the apples chunky. stick in ziploc bags of whatever size you want and freeze. Or if I don't want cinnamon, I use lemon juice or fruit fresh in the water and stir the apples around to coat so they don't turn brown.
Baked apples, you core the apples, fill with cinnamon, sugar and butter and bake til tender. you can freeze them baked.
apple pie, various recipes. you can make a pie all ready to go in the oven, and instead slide in a ziploc bag and freeze. If you have more than you have pie shells for, freeze the apple part of the pie mixture in a ziploc bag stuck in a pie pan the size you usually do and pat it down into the shape and freeze. then when you want a pie, take out the frozen pie mixings, and slide the frozen mass into a pie shell and top with a pie shell and bake.
I use a whole wheat biscuit recipe from the joy of cooking, stir in applesauce to sweeten the biscuits. then roll out super duper thin, and pat half into a 9x13 pan. Top with applesauce, sprinkle on oats, wheat germ whatever you have, and top with the other half of the biscuit dough. bake about 10 minutes and then cut into pieces like soft breakfast bars. I've only made this once, when I made up the recipe. it froze well, used quite a bit of apples, and the kids loved it.

Do you have a food dehydrator? You could dry your apples. I have this neat apple peeler/slicer/corer. I would make the little apple rings with that, and then put it in the dehydrator and let them dry overnight. The next morning, I get the dried apples out, and put new ones in.
Fruit leather would also be nice.
In apple season, we usually have apple crisp (http://www.bettycrocker.com/recipes/recipe.aspx?recipeID=35368&Source=SearchResultPage) every night with vanilla ice cream. It is so good.

Send them to me! Or you could freeze them for later use in pies, cobblers, etc. DH and I were going to go get fresh peaches the other day and ran out of time, but we are going this weekend, and I'm going to freeze a ton of them. When apples come in, I'll do the same.

ROASTED APPLE CURRIED CHICKEN WITH RICE
INGREDIENTS (Nutrition)
1/2 cup honey
1/4 cup maple syrup
5 tablespoons curry powder
4 tablespoons ground nutmeg
4 tablespoons paprika
3 tablespoons cayenne pepper
3 tablespoons whole black peppercorns
1 (6 pound) whole chicken
3 apples, cored and diced
3 shallots
2 small onions
3 cups water
3 cups brown rice
DIRECTIONS
Preheat the oven to 250 degrees F (120 degrees C).
In a medium bowl, mix together the honey, maple syrup, curry powder, nutmeg, paprika, cayenne, and black peppercorns. Rub some of this mixture all over the chicken, including under the skin, and inside the cavity. Stuff the shallots, onions, and pieces of one apple into the chicken's cavity. Coat the remaining apples with the spice mixture, and place in a roasting pan. Place the chicken in the pan, and pour brown rice around the outside. Pour the water over the rice, making sure that all of the rice is down in the water.
Bake uncovered for about 5 hours. The chicken juices should run clear, and rice should be tender.
Autumn Apple Salad
(My kids love this one!)
INGREDIENTS (Nutrition)
1 (20 ounce) can crushed pineapple with juice
2/3 cup white sugar
1 (3 ounce) package lemon flavored gelatin mix
1 (8 ounce) package cream cheese, softened
1 cup diced, unpeeled apples
1 cup chopped nuts
1 cup chopped celery
1 cup frozen whipped topping, thawed
DIRECTIONS
In a medium saucepan over medium heat, boil the pineapple and sugar 3 minutes. Mix in the lemon gelatin mix, stirring until dissolved. Stir in the cream cheese. Remove from heat and allow to cool 10 to 15 minutes.
Gently fold the apples, nuts, celery and whipped topping into the mixture. Transfer to a 9x9 inch square pan. Refrigerate 4 hours, or until firm.

We make applesauce in the crock pot. Peel apples, cut up, an put in the crock pot.
My kids ate it over ice cream!
Baked apples are also really easy. I forget the oven temp, but just put cut apples in a pan with butter and cinnamon and bake.

I grew up on a farm, but I was young when Daddy died; we quit canning and such at that time. I remember seeing Mama doing it, and I remember bits and pieces of it, but I don't remember a whole lot about it.
