Anybody have any objections to having a daily thread? Seeing that Boho is having pork carnitas reminded me of how much I enjoy gathering meal ideas and recipes from others, so I'll be happy to start one every day.
We had chili nachos for lunch (used some of the leftover chili from last night's dinner to make them), so dinner is going to be a hodgepodge of leftovers from the refrigerator and freezer:
Polish sausage
fried Brussels sprouts, fresh carrots and red onion
fettucini alfredo
corn muffins (leftover from last night, too)
And, Boho, please share your recipe :hugegrin:

I have a big pot of beef and mushroom stew on the ovem right now, and I have a loaf of rench bread that we forgot to eat w/dinner on Saturday. I will probably make some rice to go with it too,because we like rice and gravy.

Crockpot split pea soup....yummmm
My ds1 calls it slime soup...he has no clue he is eating veggies!!!!

Nothing I have to work tonight and DH will probably feed the kids leftovers since my mom is sick..... oh wait we don't have leftovers. Knowing DH he will make grilled cheese with carrot sticks on the side. He puts carrots sticks on the side of everything cuz he knows the girls will eat them. I will probably get some jello from the cafeteria before I teach class tonight.

Mmmm, tell us how to do this:)
Crockpot Split Pea Soup (I don't really have a recipe)
1 bag dried split peas
1 small chopped onion
diced ham
1-2 carrots (chopped)
Clean and rinse peas and put in the crockpot with approx. 7cups of water.
Add other ingrediants. Turn on High for the first 3-4 hours. Stir every 10-15 minutes. Then turn to low. Leave for another (2-3 hours) Enjoy!!
Some people add celery. And you can also add salt to taste.
I don't add salt because we usually eat it with Saltine Crackers anyway. Plus I don't want the baby to have salt and he loves it!!!!
That makes quite a bit so I usually freeze half of it for another meal!!!

Mimi, I'm not making traditional mexican pork carnitas, in the supermarket, that is how the cut of pork is labeled. I'm using it to make slow cooked shredded pork sandwiches in the crockpot and it's ridiculously easy!
You take a chunk of pork, I chose pork carnitas this time because it's really well marbled and that makes it taste better.
Then you throw it in the crockpot with a can of beef broth and a bottle of your favorite BBQ sauce. Shred it and put on your favorite bun or roll. Tonight I'm just making a frozen veggie but it's best if you can make cole slaw and corn on the cob to go with it. :)

well we had baked chicken with mixed veggies for lunch, so we had eggs and whole wheat toast for dinner.
