I will give out some of mine too! My favorite are my spicy oatmeal raisin cookies. I will get the recipe once DD finishes eating.

My attention span is way to short to have only one favorite. but here is a list of some of my favorites.

Lemon Squares
crust
1/2 cup (1 stick) butter
1 cup All-Purpose Flour
1/4 cup confectioners' sugar


Topping
2 eggs
1 cup granulated sugar
2 tablespoons lemon juice
2 tablespoons All-Purpose Flour
a pinch of salt

Preheat your oven to 350°F.

Cut the butter into the flour and confectioners' sugar and press into a 9-inch square pan. Bake 20 minutes or until light brown.

Combine the topping ingredients. When the bottom is done, and still hot, pour the topping over it and continue baking for about 25 minutes.

Sprinkle top with confectioners' sugar.



Jam thumb print cookies

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Preheat the oven to 350 degrees F.

In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

Peanut butter and jelly bars

1/2 pound (2 sticks) unsalted butter, at room temperature
1 1/2 cups sugar
1 teaspoon pure vanilla extract
2 extra-large eggs, at room temperature
2 cups (18 ounces) creamy peanut butter (recommended: Skippy)
3 cups all-purpose flour
1 teaspoon baking powder
1 1/2 teaspoons kosher salt
1 1/2 cups (18 ounces) raspberry jam or other jam
2/3 cups salted peanuts, coarsely chopped

Preheat the oven to 350 degrees F.

Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.

In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.

Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

White Chocolate Macadamia Nut

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) white chocolate chips
1 cup chopped macadmia nuts

Directions:
PREHEAT oven to 375° F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded tablespoon onto ungreased baking sheets. (I use a cookie scoop.)

BAKE for 9 to 11 minutes or until golden brown. Do NOT overbake. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. (I transfer mine to clean newsprint to cool completely.)

My mom makes the best No-Bake Oatmeal cookies ever. I dont know the recipe, thank God, because my ass would be twice the size it is now if I did.

Ok here are my oatmeal cookies
1/2 lb butter softened
1 cup firmly packed brown sugar
1/2 cup white sugar
2 eggs
2 tsps vanilla
1 1/2 cups unbleached all purpose flour
1 tsp baking soda
2 tbsp Chinese five spice powder
1 to 2 tablespoons ground ginger (I am guessing here, I just turn the bottle over and dump alot in)
1/2 tsp salt
3 cups oatmeal
1 cup raisins

1)Heat oven to 350
2)Beat together butter and sugars until creamy then add eggs and vanilla. Beat well
3)Combine flour, baking soda, spices and salt, whisk, then mix into butter mixture.
4)Stir in oatmeal and raisins.
4)Using a small ice cream scoop, drop dough onto ungreased cookie sheet, and bake for 10 to 12 minutes.

We made this recipe of snickerdoodles the other night and they were perfect. We didn't have any cream of tarter but it worked just fine. They were soooo good.

Dough:

½ cup each butter and shortening (or marg), at room temperature
1 ½ cups sugar
2 eggs
1 ½ teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
2 ¾ cups all-purpose flour

Beat butter, shortening, sugar and eggs together until creamy. Add cream of tartar, baking soda and salt, then blend. Add flour and mix well. Chilling overnight is preferred; otherwise at least two hours

Topping:

3 tablespoons sugar
1 tablespoon cinnamon

Preheat oven to 375°F.

Combine topping ingredients in small, shallow bowl. After chilling, shape dough into balls about 1 ½ inches in diameter. Drop dough balls into topping mixture and coat entire surface well. Place on ungreased baking sheets about 2 inches apart.

Bake in a 375°F degree oven for 10 minutes or until golden brown. Let stand one minute and remove to cooling racks.

Makes about 3 dozen cookies.


ETA: We didn't chill either.

Me too. Now I want more cookies. :) and I have some left over batter from yesterday as well...this time I will make big cookies instead of lots of little ones.....

Just left it out. They were the most perfect snickerdoodles I have ever had. They rose a lot. I think it had to do with doing half butter and half crisco.
