We are having:

MiMi's M'jaddara


1 cup lentils
1 cup white rice (except tonight, I'm using already cooked brown rice)
2 large onions, sliced very thin
3 T olive oil (divided)
3 cups vegetable, chicken, and/or beef broth
1 c water

1/2 tsp cumin
freshly ground pepper
1/4 tsp cayenne
kosher salt
1 minced clove of garlic
2 -3 T honey

Sort and rinse lentils. Sauté lentils briefly in 1 T olive oil. Cover with 3 cups broth. Bring to a boil then reduce to a simmer for 10-15 minutes while sautéing onions in remaining olive oil until nicely browned. Add rice to onions and sauté for a moment. Combine onions and rice with lentils and add water to cover. Add spices and stir. Cover and bake at 350 for 1 hour.

I dunno. Nothing sounds appetizing.
Nothing really has for the past couple of days, and I haven't really eaten yet today.
I took some ground beef out for DH and the kids, and will decide what to turn it into later.

We are having

Pork loin roast with spice rub (garlic, black peper, salt, onion powder, tyme)
Mashed potatoes (fixed with chicken stock in place of milk)
and onions cooked in olive oil (at DD's request, her fav food is onions. weird.)

I have been wanting parmessan chicken.
We will probably have buttered noodles and some type of veggie to go with it.

Change in menu ~ I cleaned out my freezer "stash" and DH is having a meatball sandwich along with the remains of a teriyaki noodle casserole. I'm soaking beans for bean/ham soup for the freezer, so I just tossed in the lentils and rice I was going to use for tonight's meal to liven it up even more.

There are two "mystery" dishes I'm thawing for tomorrow's lunch ~ lol ~ I REALLY need to start marking my containers with the contents, but then again, surprise meals are so much fun!

Date night woohoo!!! :) So, we'll be having whatever choice of restaurant we go to. I'm thinking pasta or Mexican sounds good. Then we'll go to a movie.

Hah! One of the "mystery" containers was scalloped potatoes I made and froze as an experiment. They were quite yummy after being reheated, so now I know I can freeze those with good results, too. YAY, because they are time consuming to prepare from scratch!

The other container is frozen Italian beef, so the teriyaki casserole will go okay with that tomorrow ~

And the bean mix/lentil/rice/ham soup is delish! It's cooling to go into freezer containers as we speak.

my ground beef what ever has turned into chicken and broccoli, candy corn and marshmallow creme. (not together of course!)

actually it is the indian corn, it has two of my fave things: honey and cocoa

We had spaghetti, broccoli, and garlic bread.

Tomorrow will be steak and rosemary potatoes. :D It is also date night for us, but at home. We'll drink margaritas on the rocks and play cards when the kiddos pass out.
