Hmmm, lemon chicken w/ rice soup.

Boneless skinless chicken breasts
chicken buillion, like HerbOx
EVOO
lemons
garlic
egg
rice

Brown the chicken with the EVOO, add water and buillion to taste. WHen chicken is done, remove, chop and return to pan. Add a handful of rice and cook until done. Remove from the heat, beat the egg, then stir it in. Juice the lemon and add the juice to taste. YUM.

My favorite is andouille sausage and chicken gumbo. I do not use a recipe, it is all winging it, but it turns out great every time. Portions depend on how much you want. I usually make it after having a large roasted chicken the night before and then I boil the carcass for stock.

Brown sausage, onions, celery and a little bit of carrot in a pan with salt and pepper. Add chicken stock (canned or home-made and minced garlic to taste. I always have to add canned to my home-made because I make a ton) Let it lightly boil for about an hour to get the flavors dancing. Add the chicken and then season with red pepper flakes if you like, but the andouille sausage can get pretty spicy.

for the roux, I melt 2 sticks of butter in a heavy duty iron skillet and slowly add in my flour until it is the right consistency. Then I stir over low heat CONTINUOUSLY until it is chestnut brown. It has to be very dark and you have to stir constantly or it will scorch and nobody wants to start roux over and you cannot eat it burned because it is bitter. Slowly wisk in the roux once it is done.

Make some rice to pour the soup over and eat. I do not measure seasoning, but most people season to how they like it anyway. Also, I do not use okra because I like the left-overs and the okra gets slimmy afte rthe first day. I know that it is traditionally used in gumbo and I like it, but it is not great for left-overs.

We are fans of meatball soup around here! We thaw frozen meatballs, toss them in the crockpot with grean beans, a lg can of chopped tomatoes, carrots, maybe some corn, chicken broth (add water as needed), maybe some italian seasoning and cook on low all day. I sometimes toss in some macaroni noodles and cook till they are done :) Easy peasy!

i love chili ... just made some last night ... well i do mine in the crock pot. i use mild sausage and hamburger instead of hot sausage since the kiddoes eat it. kidney beans, some onion, chili spices, tomatoes, tomatoe paste, and some chicken stock. let it cook all day in the crock pot and its super yummy! plus i always add cheese to mine ;)

LOL it's pretty warm here too, but pouring and my body is still used to fall in the north.

A ribble is flour, eggs, salt, and pepper. Mix it all together and add it inot soup in little spoon fulls and they boil into a ribble ball type thing.

Reuben Chowder has corned beef, saurerkraut, corn, potatoes, and chopped up onion and celery in it and it is soooo yummy. I mad eit last night for dinner. If you want the recipe let me know.
