I've tried various wheat bread recipes, NONE of which my husband likes. In fact, he quit eating bread after a while, he disliked it so much. I'm only making white bread right now, but I would rather make something more nutritional.
Does your husband like or hate homemade wheat bread?
And if he does like it, do you have a recipe your willing to share?
Thanks!

Can you make bread mostly white with a little whole wheat and slowly over several months increase the whole wheat?

Gosh, yes. That's one of the ways I tell him I love him- whole wheat bread. He's a food guy- the way to his heart is definitely through his stomach.

But it's an acquired taste. Whole wheat flour is much more flavorful than white. I'd try sneaking in a little at a time to get him used to it. And start replacing white flour with whole wheat in cookies and so forth. After a while white flour tastes insipid.

Here is the recipe for the bread I made today:

1 1b. whole wheat flour
2 T. vegetable oil
1/2 cup warm water
1 package yeast
1 t. salt
3/4 cup milk
3 T. molasses (or 1/2 molasses, 1/2 honey)

Add yeast to warm water and stir until dissolved. Stir in the molasses, oil, salt, and milk. Stir in 3 cups of flour and let sit for five minutes.

Stir in the rest of the flour to make a sturdy dough. Knead on a floured board until the dough springs back easily to fingertip touch. Place the dough in a greased bowl to rise in a warm place for 45 minutes or until about doubled in size.

Punch it dwn and divide it into loaves (I usually just get one nice sized loaf out of this recipe) Shape as desired and place on lightly greased sheets or in a well greased bread pan and let rise until doubled in size.

Bake at 425 degrees F for 10 minutes. Decrease to 350 degrees and bake about 25 minutes or until golden brown.

You can also start with "white whole wheat" (King Arthur makes a good one) flour.

Yes, here is ours

Honey Whole Wheat Bread

(1 ½ lb. Size)

3 cups whole wheat flour

1 ½ teaspoons salt

¼ cup warm water

2 Tablespoons olive oil (you can use butter, shortening, veggie oil)

1/4 cup honey

1 Tablespoon dry milk (its okay to omit this, it just adds a little flavor)

2 teaspoons yeast (I use Fleischmann’s rapid rise yeast)

¾ cup + 2 Tablespoons water

Combine salt and flour. Dissolve the yeast in the ¼ c. warm water; let sit for 10 minutes. Then add in the rest of the water (¾ c + 2T) after yeast is dissolved add the oil, honey, dry milk, and yeast water mixture to the flour. Stir and knead for 5 minutes. Place in a bread pan and let it rest and rise in a warm place for one hour. Bake at 350 degrees until golden brown.

Bread machine version of the above
Note: I usually make this in my bread machine on the dough setting. The instructions for my bread machine say to first add the wet ingredients, then all the dry ingredients. So that's what I do. I add all the water at once so: 1 cup plus the 2 tablespoons water, then add the honey right into the water. I coat the measuring cup with olive oil, so the honey slips right out. Then I add the flour, salt, butter, and yeast and sometimes the dry milk if I have it. I use the dough setting to do all the kneading for me, then I bake it in the oven.

Yes but, I had to ween him to it. I started by making half wheat and half white and slowly increased the amount of wheat flour used.

This is the recipe that I use most. You might want to keep in mind that it makes 5 loaves.

5-6 cups warm tap water
2/3 c. oil
2/3 c. honey
2 tbsp. dough enhancer
2 tbsp instant yeast
2 tbsp salt
2 tbsp vital wheat gluten
12-16 cups freshly milled whole wheat flour

Pour warm water into Bosch mixing bowl. Add approximately 6 cups flour on top of liquid. Then add dough enhancer, oil, honey, yeast, and gluten. Use the (M) momentary switch to mix well.

Add approx. 5 additional cups flour, and salt. Turn to speed 2. Continue adding flour 1/4 cup at a time until the dough pulls away cleanly from the sides of the bowl. Continue kneading on speed 2 for another 5 minutes.

Divide dough into equal portions and shape into loaves. Put into well greased pans. Let rise till double in size. Bake 350 degrees for 25-30 minutes or until golden brown on top. Remove from pans and cool on wire rack.
