baking squash!

I got a nice spaghetti squash at the farmer's stand where we bought our pumpkins. I have it in the oven, stabbed up pretty good, at 375 for 1 hour.

Anyone have any really yummy things they do to the squash when it comes out all nice and baked and toasty?

I usually cut mine in half, dot with real butter and salt and pepper.

I've been known to top it with marina sauce which DH looks at and says "That just ain't right woman, that just ain't right"

I have a friend that also fills it with a bread stuffing she concocts about halfway through cooking and then cooks together for the remining of the time. Covering with foil in the begining and then removing the last 15 in order to crisp the top.

I don't think I cooked it long enough, the strands were a little crunchy, no one liked it.

Next time I think I'll try the kind of squash you bake and mash up. I hope it turns out better.

I cut mine into slices and cook them on top of the stove in a frying pan with onions and a little olive oil. I cook them until they pretty much look stewed.

That sounds really good Judy, all my kids loved squash as babies and I love sweet potatoes so I figure we should like squash if I can cook it right! We need more variety in our diet around here.

Spaghetti squash turns out a bit crunchy. That's normal. I like mine with white sauce, but it's also good with red sauce. Just like spaghetti.
