I have a very picky eater, dd eats only a handlful of things however she loves Mexican food, especially chicken quesadillas. I have seen several presentations of them and she will eat a whole one which is more calories than she typical takes in all day.
SHe loves the ones with cube mostly unseasoned chicken and white cheese and the one with shreaded chicken that has the tomatoes/onion taste and white cheese.
What cheese is that? I have tried making it and it's not cheddar or jack.
I know I could use the crock pot salsa chicken recipe but I am not sure that will work and then I'd be the only one eating all of it. Anyone know how this chickedn is typcially prepared?
Also looking for good bean recipes/pico de gallo, or fresh salsa.
Many thanks to anyone who can help. I love that she will eat this much protein and she eats so little this is good.

You could cook it in a crock pot with chicken broth, since she prefers it lightly seasoned. The white cheese may be cooper sharp, that is what we use:)

Where do you buy cooper, I have not seen it for sale?

I think it's a brand of cheddar.

It might be Queso Blanco. You can find it in Walmart and I have seen it in Save-A-Lot.

Like how we all think it is something different? I bet it's Asadero though.
It might be it's a really different flavor than cheddar, or jack it's not those, I have tried them.

Asedoro is what I think. :) I just brown chicken breasts in a small amount of olive oil and salt and pepper. My kids like the chicken to get a 'crust'.

What kind of beans are you looking to cook. We cook all kinds of mexican food in my house and our favorite are black beans.
Our Pico de Gallo consists of:
Tomato
Cilantro
Onion
Jalapeno
Chop it all up into little cubes (very little) and then you add some water and a squeeze half a lime into it and some salt and you make home made tortilla chips with it.
We have all kinds of salsa to that we make
Salsa Verde (green slasa)
Chipotle sauce
traditional mexican slasa
and a few others that i don't remember the names of right now but i do know the recipes.
Also if your DD likes quesadillas she might like Floutas. That is a cooked tortilla with shredded chicken rolled up in it and the you put a tooth pick through it to hold it together and then you deep fry it until it is golden brown. YOu eat it with shredded lettuce chopped tomato nad avocado and you put black beans and sour cream on the side and you make a red slasa to go with it. But the salsa is for the adults cause it is spicey but very flavorful.

I like black beans, kidney and pinto mostly but am not picky I would like to get more of them into our lives. Any recipe will be tried.

Any chance it's coteja? Are you anywhere near a Mexican grocery store? They have a few unusual cheeses asadero and coteja among them) that it could be.
Which restauarant does she enjoy her Mexican food from?

She really likes several in town, it's odd because she isn't at all picky out it when she is very much so about every other type of food.
I could be either of these cheeses, I will have to ask which they use nextt ime we are at one
I think all the ones who make the same style quesadilla are using the same type of cheese, there is one who is quiete different that uses something else so it may be both of these.

Have you tried the Mozzarela cheese. Normaly that is the cheese that mexican restaurants use on their food. That or they use the actual mexican cheese which is a crumbly cheese that doesn't really melt. It is called Queso Fresco or Queso Michoacan. But yeah most americanized mexican restaurants use mozzarela cheese.
