What can I make today or tomorrow and still have it be okay? I'm really hoping to only cook a small amount on the actual day.
Here's the menu, broken down simply.
Ham
Mashed Potatoes
Celery & Olives
Gravy
Pumpkin Pie
Crabapple Jelly
Rolls w/ butter
Stuffing
Broccoli
Hot cider

Before:
Pumpkin Pie
Celery & Olives- arrange on a partitioned platter or separated dish so juices don't mix, then cover and put in fridge.
Crabapple Jelly (I think, but I've never made it...)
Your meal sounds very yummy!!!
You could also chop your broccoli and potatoes up ahead of time so all you have to do is throw them in there when the time comes. (That's what I'm doing!)

roll dough can be made and put in the refrigerator. Then shape them let them raise and bake thanksgiving day.
broccoli can be washed and cut up so all you have to do is cook it that day.
Celery can be washed and cut up now.
every thing else I would make that day.

Mashed potatoes can be prepared ahead of time & then stored in a covered baking dish. Warm them in the oven day of.
350 for about half an hour to 1 hour - Sprinkle with breadcrumbs & Parmesan Cheese & chives to make it look more deliberate

I should have said that the crabapple jelly is already made, and goes really well with ham (brings to mind turkey & cranberry).
The cider I am making, but only consists of adding cinnamon sticks to it.
The broccoli is frozen, I'll just add some salt and sugar to it when cooking.
I LOVE stuffing, it's very yummy when gravy is added to it, and today for lunch I'm making some and adding mushrooms and bacon. Mmmm!
