I realize that I'm probably lucky to have this 'problem', but I'm asking anyway.
I have SO much milk sometimes that my DD 3mo, can't keep up. We both end up soaked! Is there a way to control my "flow", especially @ let down?

try block nursing.
don't switch from one side to the other in a feeding, stay on one side per feeding. after a day of that, see if it's better or the same,
if it's better, stay at one side per nursing time, next nursing time, go to the other breast.
If it's not better, do 2 feedings in a row from one side, and then switch to the other side for the next 2 feedins in a row. or go by time if that's easier to remember.
If you are drowning baby at let down time, latch baby on, then unlatch at let down, let extra milk flow into a towel or diaper and then relatch. experiment with positions so that baby is not downhill from a flood, nurse in a more upright position so gravity slows the flow and baby doesn't drown.

I actually already do nurse on only one side each feeding, I'll work on your other ideas and see how things go. :)

I had that same problem. What I did was pump the side that wasn't nursed on so that there'd be less milk at the next feeding. It worked for me.
I don't quite see how that worked for you, since usually pumping means MORE milk. Supply, demand.
So to the OP. If you ever get uncomfortable because you have too much milk, hand expressing a bit, just enough to feel comfortable, is the way most suggest to go about. LIke that you limit replenishment, but don't risk any infection (plugged ducts or mastitis).
