Hubby is meat n potatoes. What are some meals that use either beans or veggies or whatever (we tried TVP and didn't like) that you LOVE and don't seem to be missing meat?

Chili is my favorite.
Also, on a cold winter's day, I enjoy a bean and veggie soup. It can be made in all kinds of ways though I prefer mine with a mild tomato base and quite a bit of celery root.
My spaghetti and lasagna are both meatless. I also make a mushroom stroganoff. Then there is rattatouille. I enjoy veggie stir-fry as well.
Most of my recipes are meatless, but at this moment I'm having a brain fart and can't think of them all.

Tamale pie. The recipe calls for meet, but instead I use only mozarella cheese or pepper jack cheese and diced jalapenos. I also season the masa by replacing some of the water that is called for with green enchilada sauce and some diced garlic and onion powder. It is a family favorite. My DH is a meat guy too and he loves it. I usually make corn on the cob or some sort of slaw with it.
P.S. I can post the recipe if anyone wants it later..right now getting DD reason for school.

Meat-free or just beef/chicken free? I have some that use fish...
Tuna Casserole
Cumin Beans and Rice
Lentil Soup
Spinach Quiche (egg and cheese)
Greek Pizza (pizza crust, feta, tomatoes, rosemary, garlic, olive oil)
Bowtie pasta and beans (tomatoes, spinach, cheese)
Black Beans over Polenta
Pasta e Fagoli soup
Tortellini/frozen ravioli
Egg Salad Sandwiches
Pinto beans and cornbread
Black bean and feta salad

I made some Tomato and Spinach Pulao that was so good. It's become a new comfort food. Making Skillet Supper tonight; beans, rice, veggies in red wine. Made stuffed acorn squash last week. YUM! So nice to be cooking more vegetarian, and even better to be with someone who'll actually eat it!
If you're looking for a veggie cook book, my favorite to date is The Passionate Vegetarian by Crescent Dragonwagon. It's an awesome tome full of stories and delightful recipes!
Fave? Spaghetti. No meat in my pasta!!! Also cheese ravioli, tunamac and chili.

Risotto! With a salad on the side, its a very filling meal. Its my ultimate comfort food.

This was the first one I ever made, and one I still make often :) Sun-dried Tomato Risotto (http://www.epicurious.com/recipes/food/views/Sun-Dried-Tomato-Risotto-11756). There are literally thousands of different ones you can make once you get the technique down, which is basically just stirring! The traditional rice used is Arborio, which I've found hard to find and very expensive when I can find it. I use medium grain rice and it works just fine and is dirt cheap.
This is one of the first foods my kids eat when they start solids (sans sun-dried tomatoes!).
