We haven't had this for a while, so I thought I'd revive it.

They guys are having french toast, eggs, and bacon for dinner. I will be having an egg white omelet and bacon.

DH is grilling pork steaks and I'm making baked potatoes and fried Brussels sprouts to go with them.

I will probably be making something with chicken and a tossed salad. Last night was crazy so we had fast food and my stomach still feels full from that. Blech I hate fast food.

A whole roasted chicken.
roasted root veggies (sweet taters, pototes, parsnips, turnips, brussel sprouts, carrots all fromthe garden cept the sprouts.)
homegrown Kale with bacon.
Homemade white bread.
Oh, and Apple pie!
Mimi I have never fried brussel sprouts!

I made a crock pot pork roast last night, so we will be shredding that for pork tacos and I am getting ready to make an avocado pico to go with. It is a quick night because DH has pool league.

mmmm...I have to try and make a pork roast.

I made a beef roast last night with onions and carrot. Mashed taters for the side, and pumpkin spice bars for dessert. Delicious!

Tonight is out eat-out night. I get off at 4:30 and church is 6 - 9pm (I have choir practice after church) so we don't cook on Wednesdays.

I usually let Natalie choose where we go....there's a good chance we'll end up at "Ole Mac Donowld's" or Cici's Pizza.

I hope she's craving Chinese, myself! ;)

I normally use frozen, so I thaw them and cut them in half. I chop up some onion (and sometimes carrots) and fry them in bacon grease...omg...delish!

I love potatoes, but I don't eat them often because I can tell that they trigger my arthritis.

I sautee mine in butter with salt and cayenne pepper. :p I think I might try cooking them in the toaster oven tonight so that I don't have to stand over the stove.

Something i have been craving for weeks now! I hope to find a $20.00 in the road this afternoon so DH and I can go soon! I have to have some before this baby is born!

Totally lazy today, I threw in a couple of chicken breasts with a jar of salsa in the crock pot. I'll shred it at dinner and have chicken tacos with the all the fixings.

Dh isn't here to ask him how he cooks his, but here's a recipe I found:

I also like maduros, which are fried ripe plantains. They're sweet instead of salty, but I have to be careful with those because if they're really ripe (the way most people like them because it makes them sweeter), they make me sick since I'm allergic to mold.

My organic produce delivery came yesterday, so tonight we are having roast chicken thighs with mushroom rice pilaf, and a green salad with sweet peppers and roasted beets.

My husband would cry if I requested beets. It is the one thing he refuses to eat!

We also had a pork roast! Baked in the oven with diced potatoes and green beans on the side. I wish we'd had homemade bread to go with it. Hell, any bread would've been super.

I think we are having cheap mac and cheese, ham and green beans. Yeah for quick and simple, although not so good for salt and nitrates probably...... ;)

Michele, how do you roast your beets?

Judy, I scrub them clean, wrap them in foil, and toss them in the oven at 375 until I can pierce them easily with a fork. Later I remove the skin and slice.

These beets come with the greens attached, so I wash those up and toss them in a pan with some garlic and olive oil. MMMMM. Yummy!

Tonight's dinner is Pechugas de pollo al Ajillo. Hope I spelled that right. Basically, it's a Basque dish of chicken with garlic and parsley. Probably steam up some veggies to go with it and call it good. :)

Very simple dish. Chicken, salt, garlic cloves, parsley and olive oil. That's what I love about cooking; doesn't always take a lot for something tasty to happen. :)

I've never had an empanada, sounds good!

Right now I'm boiling some chicken carcasses down with veggies and spices to make some stock that I'll use to make chicken soup tonight. I'm so glad it's fall and cooling down because I love to have something cooking in the kitchen filling up the house with good smells. :)

We'll probably have leftovers tonight since DH is working. I have some spaghetti with homemade meatballs, and I made these really good pulled pork barbecue quesadillas with my own homemade Carolina sauce. They were really, really good. I think it'll be a combination.

Me too! One day I will have a home that I can cook in year round without it heating up too much.
