If I remember correctly, it also has to be rice-free, right?

I am so cornfused with it all, TBH. They told them to come to the office and they'll have him try wheat. When they got there, they told them that actually, it won't be today. They want them to wait a whole other year...WTH? My sister was not happy and understandably so. My BIL took half a day off, and they drove a total of 2 1.5hrs.
Ok, sorry, rant over.
She told me that he can have gluten free stuff. She also said that it isn't celiacs, but something else. They said that the way he reacted to rice is worse than an allergy..?! Really, we have no clear answers, but all *I* know is that it has to be rice and gluten free...and soy...and whatever else.
I don't get how someone who is severely allergic to wheat can have gluten free stuff. Aren't there still properties of wheat there?

Stir frys are a good idea. I wonder if she has thought of those. She can use corn pasta in them.

It's really hard to buy pre-made gluten-free stuff that's also rice- and soy-free. She'll basically have to make most things from scratch.

No, there is no wheat in a product if there is no gluten. Gluten is found in wheat, barley, and rye, and a similar protein is found in oats.

So, what is it made up out of if there is no wheat in it?

Usually rice, corn, tapioca, and/or bean flour. Unfortunately, things are usually made of a combination of things.

Try glutino. They tend to be corn based. Also, Bob's Red MIll (at Whole foods and some local grocery stores).
Go to Whole foods, find someone who works there and ask them for help. We've done that on more than one occasion.
Also, fruit smoothies can become your best friend.
I would also suggest you try looking at some of the autism sites that deal with diets, many people are on soy, gluten, etc. free diets and may be able to point you in a better direction. http://gfcf-diet.talkaboutcuringautism.org/gfcf-in-10-weeks.htm may be helpful.

Ah, thanks for saving me from Googling. He can have everything but the rice. That was his huge trigger.
I am going to start researching this so I can make some stuff for him to have when he is over here, and to help her out a bit. I think she is finding all of this disheartening. While this is the least of concerns from dealing with a preemie, she really needs a break.

Thank you, Steel. That will help her out a lot. Judy brought up corn pasta. Which he LOVED by the way, Judy.
Good to see you around too. :)

We had problems with Bob's Red Mill. When we ate hot cream of rice cereal, Jacob broke out in hives, and I felt like I do when I eat yeast; the only ingredient listed was organic brown rice. I called the company, and as I suspected, they make all of their gluten-free products on the same equipment. (Nothing with gluten is made on that line.) Jacob is allergic to beans, so that was most likely the problem for him. The lady at the company told me that they dump the first 30 pounds of each batch, but we had problems regardless.

30 pounds in a commercial processing plant is comparable to rinsing a cup of water threw a bread maker and expecting it to come clean :( I worked as a bathroom cleaner in a plant and saw first hand if something was contaminated or they switched types of food the entire machine was torn apart and cleaned down with high pressure hoses. then the first entire batch was made and thrown out just in case.

I had not thought of it that way, but it makes sense. Now I'm uneasy anytime we try a new product because we never know, and with allergies like beans and yeast, the company doesn't have to put warning labels.

Hmm. Gluten free stuff usually has rice in it, so I'd just skip the GF stuff altogether and make things that don't involve it at all..
Roasted chicken throw in some cut up Sweet potatoes and pineapple - yum!
Baked potato or baked sweet potato.
You can throw lots of stuff in a crock pot and it's good - a little meat, carrots, taters, parsnips, celery..my kids love that.
Salads with snap peas, different kinds of lettuce, grapefruit sections, And pomegranate - Jake likes the little "jewels".
Cut up fruits, melons, apples, pears,
Lasagne with sliced eggplant or squash instead of noodles
Chili

Do you cut up the sweet potatoes or what? I've never thought of putting sweet potatoes and pineapple together.

Ooh it is sooo good!
I have made it a couple different ways. Chicken and chunks of sweet potato, pineapple , vidalia onion, and coconut and some red bell pepper, Put some Jamacian seasoning on it and bake it.
or chunks of , pineapple and ham and onion on skewers and grilled, with a side of baked sweet potato.
Or In a crockpot, cut up sweet potato, pot roast, parsnips, cover with water and cock till the meat falls apart.
My mom makes sweet potato casserole with pineapple chunks, coconut and marshmallows on top. It's dessert category.

There are several sweet potato fields around here, and after they harvest, the farmers let anybody who wants to go through and pick up leftovers..So we have a lot of sweet taters in the fall.

Jennies Coconut Macaroons (http://www.macaroonking.com/products_t.html)
The only ingredients are unsweetened coconut, honey, and egg whites. Can he eat all that?
You can buy them at Harry's/Whole Foods. I want to figure out how to make them.
